The Coffee Recipe That’s Good For Your Brain!

Hi & happy Monday!

Ohhhh wow are you thinking it too!? Another Monday!! How did that come so fast?

Seriously though, the weekends never (ever ever) feel long enough. I wish there were two sets of weekends. One for all the fun hangout type stuff and the other for getting stuff done. That way there would never be another debate over whether I should spend the weekend watching Netflix, catching up with friends, or being productive. Even still, I try to aim for a sweet spot somewhere in the middle. A little friend time, a little work time, a little me time… That seems to do the trick 🙂

Although I can’t make your weekend stretch any longer than it already is, I can hopefully help your Monday feel a little more cozy and calm. Before I prep for this week and all that is coming, I am taking a moment to slow down over a cup of butter coffee. And this is so hard for me!!! It takes so much thought and intentionality for me not to rush into my to-do list but to simply be still and prioritize my own well being. I guess airplane rules apply here too! I gotta remember to put my own oxygen mask on first before attempting to help the person next to me (even if that person is a cute boy, my mom, best friend of all time, etc. etc. you feel me!!).

There are things I need to do each day to set myself up for success. I like to find a quiet spot in the morning to work on my breathing and to pray and meditate through scriptures. I want to make sure I have lots of good healthy yummy food prepped so that I can feel sustained in my energy throughout the day. And then it’s super important to me that I move in some capacity whether it’s through yoga, a HIIT workout, or a simple walk around the neighborhood. I struggle with depression and food allergies and so so many insecurities (ah, don’t we all) and have learned the hard way that if I don’t put a few of these things in place, I’ll really suffer in my mental + physical + emotional health. Have you ever felt that too?

Something that really helps me slow down in the mornings is this butter coffee. I wanted to share my recipe! It’s one of my favorite things to make and it has some good health benefits. I got hooked when I lived in Austin. There were so many places that made it but some cups with all their cool hippie powders and add-ins could be as much as $8! It was a fun treat every now-and-then but definitely not something I could do on the regular. So I started making it at home!

Popular among the Paleo food crowd, butter (or bullet proof) coffee is a blended one-uped version of your tried and true brew. It’s made with grass fed butter (the only thing on my allergy list I still eat — high quality butter doesn’t seem to break me out!) and MCT oil, which differs slightly from coconut oil because it has a higher concentration of medium chain triglycerides. MCT oil may be linked to lots of brain boosting bennies like reducing brain fog and increasing concentration — two things that can so quickly threaten the productivity of my day. The butter adds an incredible creaminess that you wouldn’t believe so just trust me here before you get grossed out about there being butter in your coffee!!

There are also lots of fun things you can add in to make it taste like hot chocolate or a Pumpkin Spice Latte (and I’ve added some other recipes to my Pinterest board!), but here’s the sweet & simple way I make it…

Fun fact! Your brain is made of 60% fat so it’s actually good to eat high quality fats & oils (“good fats”) in your diet.

Brew coffee as normal. I use a standard coffee pot but a French Press works perfectly too! Make sure you brew hot coffee. You can always add ice after for a cold mix at the end but you want the coffee to be hot so the butter and coconut oil dissolve 100%.

For one serving, add the following ingredients to a blender:

  • 2 cups of brewed coffee
  • 1 tablespoon of grass fed butter (unsalted!! Super key.)
  • 1-2 tablespoons of MCT oil

Optional:

  • 1-2 tablespoons of Collagen
  • Sweetener: 1-2 tablespoons of maple syrup, honey, etc. or a coffee creamer of your choice for added sweetness (I use a french vanilla coconut creamer; yum!)
  • A dash of cinnamon

Blend on low for 10-ish seconds, or until you see a frothy top begin to form.

Pour into your favorite mug! Anthropologie mugs are my weakness and I love gifting them to my girlfriends, professors, co-workers – you name it!

All in all, I know how hard it can be to slow down, take a me-moment, and prioritize my own health physically, mentally, and emotionally. I hope this recipe adds a little warmth and calm to your day. Maybe it will even help you remember what matters most to you as you write your to-do list and begin to rev up this new week.
